Our Wild Rock Rose fermented craft beverage undergoes a long fermentation process using a live kombucha culture of yeasts and bacteria. The fermentation is temperature controlled within a strict +/- 0.25 deg. Cel. range to ensure a unique sour, acidic and rockrose polyphenol- and metabolites-specific rich and complex flavor profile. All herbal ingredients are sustainably harvested in Southwest Portugal from the Southwest Alentejo Natural Park's inner hills, in a serene cork tree forest ecosystem not far away from the fresh Atlantic Ocean breeze. The four rockrose (Cistus) species contained in the drink (Cistus salviifolius, Cistus ladanifer, Cistus crispus, Cistus monspeliensis) are carefully selected to maximize its polyphenol diversity profile.
